1 1/4 oz Stonecutter Spirits Single Barrel Gin
1/2 oz Pimms
1/2 oz hibiscus grenadine*
1/2 oz cherry shrub**
1/4 oz lemon juice
2 drops rose water
Soda water
Combine all ingredients except soda water in glass shaker. Fill with ice. Shake vigorously for 8-12 seconds. Fine strain into wine glass filled three quarters with fresh ice. Top with soda water. Garnish with lemon wheel.
*Hibiscus Grenadine
2 cup Pom pomegranate juice
2 cups sugar
2 tbs hibiscus
Combine pomegranate juice and sugar in microwave safe bowl. Microwave 4 minutes. Stir, checking to make sure sugar is completely dissolved. If not heat an additional 2 minutes. Add hibiscus. Let steep (covered) for 20 minutes. Fine strain.
**Cherry Shrub
1 1/2 pounds frozen cherries
1 cup sugar
1 cup water
1 cup apple cider vinegar
Combine sugar and water and heat over medium heat, stirring until sugar is dissolved. Add frozen cherries bring to a low simmer over medium heat. Simmer for 15 minutes, or until the syrup has taken on the color of the cherries, and the fruit is beginning to lose its shape.Stir in the vinegar and bring back to a low simmer. Remove from heat once the mixture begins to simmer, and allow to cool for 10 minutes. Pour mixture through a fine mesh strainer lined with cheesecloth, pressing down to extract as much liquid from cherries as possible. Label and store in refrigerated when not in use.
