Maple in a Pear Tree cocktail

1 oz Stonecutter Spirits Maple Cask Whiskey

1 oz St. George Spirits Spiced Pear Liqueur

½ oz Runamok Maple Whiskey Barrel-Aged Maple Syrup

1 each Griottines, Morello Cherry in Kirsch

1 whiskey poached pear ball


Combine Maple Cask Whiskey, Spiced Pear Liqueur & Rye Whiskey Barrel-Aged Maple Syrup into shaker glass. Add ice, and shake well. Strain into coupe glass. Add the Morello Cherry to a cocktail pick, or skewer, followed by the Poached Pear Ball. Garnish the cocktail with the Cherry & Poached Pear Ball submerged, with the pick hanging or leaning against the rim of the glass.


Whiskey Poached Pear Balls

2 Bosc Pears, peeled

½ cup Stonecutter Spirits Heritage Cask Whiskey

¼ cup Runamok Whiskey Barrel-Aged Maple Syrup

1 Madagascar Vanilla Bean

1 whole Star Anise

1 Cinnamon Stick 1


Cut the Pears in half, lengthwise, and core with a melon baller. In a small saucepot, add the Whiskey & Maple Syrup and bring to 170F. Add the Vanilla Bean, Star Anise and Cinnamon stick. Add the pears, adding water if needed to cover the pears, and return to 170F. Cover and poach for 30min, being careful to keep a slightly firm texture to the pears. Remove the pears, then strain and reserve the poaching liquid. Cool both, separately, to 38F. Using an 18mm Melon Baller, carve spheres of pear and store in the cooled poaching liquid for service at 38F.
