1 1/2 oz Stonecutter Spirits Heritage Cask Whiskey

3/4 oz watermelon shrub*

1/2 oz lime juice

1/2 oz mint syrup**

Combine all ingredients in glass shaker. Add ice. Shake vigorously for 8-12 seconds. Strain into Shark mug (or rocks glass) filled with pebbled ice.


 

*Watermelon Shrub
1 1/2 cup sugar
1 1/2 cup water
6 cups puréed, strained watermelon
1 1/2 cup rice wine vinegar
4 tablespoons lime juice

Combine sugar and water in small saucepan and bring to a boil. Continue boiling briefly, until all sugar crystals are dissolved. Allow to cool completely before proceeding. Combine with watermelon purée, lime, and vinegar. Skim off any foam from surface. Cover and let rest in refrigerator for at least 2 days.

**Mint Syrup
2 cups sugar
2 cups water
1/2 cup mint leaves, taken off stem, coarsely chopped

Bring sugar and water to simmer over medium heat till sugar is completely dissolved. Remove from heat. Add mint leaves. Allow to steep for 20-30 minutes covered. Fine strain out mint. Let cool completely. Refrigerate when not in use.
